Crayfish Ceviche Recipe by Tetsuuya Wakuda

A recipe we did not have time to show on Cheese Slices, but too mouth watering to hide away in archives.

 

You will need:

fresh crayfish

salt & white pepper

grated lime zest and lime juice (save some zest to garnish)

grated ginger

hint of garlic

splash of rice wine vinger

fresh good quality cream

pure extra virgin olive oil

soy sause

red onion and cucumber cut finely
