3 Fast and Easy Summer Recipes with Halloumi

These are our top three summer recipes designe for you to spend less time cooking and more time relaxing at your next barbecue. You can get our Aphrodite Halloumi in the US exclusivesly at Wholefoods.

 

WATER MELON SALAD

 

 

SERVES 2

COOKS IN 5 MINs

YOU WILL NEED

1 block of Aphrodite Halloumi (thickly sliced) • Watermelon 2lb/1kg cut into chunks
Bunch of fresh mint
Juice of 1 lemon
1 tablespoon of EV olive oil

HOW TO MAKE

• Heat grill or barbecue to medium-high. Add thickly sliced halloumi to pan or grill, and cook for 1-2 minutes on either side or until golden-brown.

• Layer with skinless slices of watermelon and a few mint leaves on a plate. Finish with lemon juice and oil.

HALLOUMI TACOS

 

SERVES 2
COOKS IN 5 MINS

YOU WILL NEED

Salsa

• 1 mango
• 1/2 red onion, nely diced
• 3 tbsp fresh cilantro/coriander leaves, chopped • 1 mild red chili, deseeded and nely chopped
• 1 tbsp EV olive oil
• Sea salt and freshly ground black pepper

Tacos

• 1 x block Aphrodite Halloumi (sliced)
• 4 mini corn tortillas
• Lettuce and cherry tomatoes, or other salad veg of your choice

HOW TO MAKE

  • Dice and combine the salsa ingredients. Set aside.
  • Slice Aphrodite Halloumi. Heat a non-stick pan to medium heat, add halloumi and cook for approximately 1-2 minutes on either side or until golden brown.
  • Spoon some of the mango salsa onto the warmed or lightly grilled tortilla, layer with lettuce and tomato as desired and top with hot halloumi.

Serve immediately.

YOU WILL NEED
